Knives

For your cutlery choose wisely. Go for quality over the price. Cheap Cutlery is not a bargain. Select either carbon steel or stainless steel. My preference is good quality stainless steel. It is easier to maintain than carbon steel and holds the edgealmost as good. Stay away form serrated blade with the exception of steak knives, maybe your bread knife. Serrated edges tend to raw foods will not tear cleanly cut, especially with meat. Always sharpen your knives by hand with a stone or a butcher's steel. Electric pencil sharpeners eventually ruin the edge. Even when cutting with a knife, always do it on a surface that is soft to the knife. I recommend a wooden board for at least an inch thick. A thickness of one inchwill help to prevent warping. Make sure the board thoroughly as soon as possible and dry it completely clean to prevent warping or cracking.
Chef's knife – the round with a triangular blade – 7 to 14 centimeters. I have a preference, the 8 to 10 inches.
Bread knife – 8 to 10 inches – that's better when meshed, because they cut less pressure with fresh bread, it takes only a few ways of breaking the loaf.

In large saucepan, sauté onion in butter glazed translucent but not brown. Add the broth and seasonings, cover and let simmer slowly. When the squash is ready toscoop the flesh into a blender and add some of the broth. Puree the pumpkin and the music back into the pot. Salt and pepper to taste. Enjoy the ruggedness of your butternut squash as a soup or add the cream for a more elegant soup. Do not boil.

Butternut Squash Risotto with Leeks

2 pounds butternut squash
2 tablespoons olive oil
6 cups chicken broth
2 leeks cut into thin slices (about 3 cups)
2 cups Arborio rice
1 / 2 cup dry white wine (or white wine they serve)
1 tablespoon fresh sage – chopped
1 / 2 cup freshly grated Parmesan or Grana Padano
Crisp, crumbled bacon as a garnish

Rub Cut squash in half, scoop out seeds, olive oil, salt and pepper and roast in a 400-degree oven for 45 minutes or until they are soft. In a separate saucepan heat the broth.
In large saucepan, sauté the leeks in olive oil until they are soft but not brown. Add the rice and stir fry 1 minute, constantly. Add the wine and stir until itabsorbed. Add  ½ cup of hot stock and simmer taken up, stirring frequently. Allows the remaining shares  ½ cup at a time, has to be incorporated before adding more. Stir frequently, until rice is tender and mixture is creamy – about 25 minutes. Scoop out the flesh of the squash, coarsely mash and fold the pumpkin and sage to the rice mixture. Season with salt and pepper. Top with grated cheese and crumble bacon.

Orange Spice Sweet Potato Soup

Ingredients:

1 clove garlic, finely chopped

2 1 / 2 cups vegetable broth

1 1 / 2 cups unsweetened orange juice (not concentrate)

1 cup yogurt

1 tbsp chopped coriander

Salt and pepper to taste

1 teaspoon cinnamon

Peel and dice your sweet potatoes into 1 to 2 "chunks. Heat the vegetable oil in a large saucepan or soup pot. Stir in the diced sweet potatoes,chopped carrots, onions and chopped garlic, cook over medium heat, stirring constantly to prevent sticking.

Pour in the vegetable broth and orange juice, cover and bring a full boil. Reduce the heat to low and cook the soup for 20 to 25 minutes, stirring occasionally to prevent, sticking and scorching. Remove cover and check to see if the sweet potatoes and carrots fork tender. If so, pour the mixture into your blender and process for 1 1 / 2 minutes until pureed and smooth. Return the soupreturn to saucepan.

Stir in the yogurt, cilantro and season with salt, black pepper and cinnamon flavor. Let soup stand for 1 minutes before serving.

Once the mussels are open remove, remove the pot from the stove. Set a strainer lined with gauze or metal mesh strainer over the pot of soup. With the lid to hold the mussels, pour the mussel liquid through the sieve into the soup. Back to the fish soupthe heat and allow the return to a simmer. Use a slotted spoon or tongs to transfer the mussels to 6 warm bowls. Ladle the soup over the clams and serve.
