Cajun Chicken – Chicken Fricassee

Chicken fricassee

This is a simple recipe, it takes only 30-45 minutes preparation time and say it cooks in 4-5 hours, but the longer you keep it cooking have more flavor. Do not be discouraged prep it's easier that it sounds. I try to be only well defined by and so well understood.

Ingredients:

Cut vegetables as described below:

1 large onion whole

2 bunches Green

Cut 1 bunch of parsley (with the kitchenScissors)

1 Green Pepper

1 Jalepino Pepper

Set them aside for a later column

1 chicken leg and thigh (per person)

1 ½ cup oil

1 cup flour

1 tablespoon Hungarian paprika

(the more taste, less heat is, it is also darker in color)

Salt and pepper to taste

1 tablespoon chicken seasoning

2 cloves garlic or 2 tablespoons of garlic in a jar

2 cups water

1 cup cooked rice to serve (per person), on the side. Cover withRue.

Wash the above ingredients, chop (except parsley) into small pieces about ½ inch long and wide. Chopped parsley with kitchen scissors. Put in a large bowl. Mix well set aside. NOTE: If you remove a less hot meal you want the seeds from the jalepino pepper.

Now take a large pan, cast iron, if you have it, if that's not ok. This is called Rue. Oil and flour, and stir over high heat. Stir constantly. Keep your heat on this mixture, until a medium brown (most Cajunsmake it very dark, but if you do burn it kind of taste, in my opinion). I recommend to cook until it is a little darker than a wooden spoon. Add the spices, paprika, salt & pepper, chicken seasoning, and garlic. Add the cut vegetables and mix well. Cook another 5 (five) minutes. This mixture is thick,

Skin Wash the chicken thoroughly. I season the chicken with garlic powder, pepper, spices and chicken. Place in Crock-Pot to cover the bottom. 1 layerRue ½ chicken, cover the chicken, a second layer of chicken, cover with Rue as the first layer. Add 2 cups water, cover and cook for 4-5 hours until chicken is the bone.

Carefully remove the chicken on a plate, take the rue and remove all the excess oil floating on top.

Note: Accommodation in a bowl and transfer to the freezer for 10 minutes, until slightly cooler does. Oil rises on Rue sinks. Spoon the excess oil from the top. TrashingThe oil from the top. (Remove more oil to the healthier you can be your meal.) Location of the Rue back into the pot-pot and turn heat to high, place, or in the microwave and cook for 3-5 minutes. Only until it's warm already cooked.

Serving suggestions:

They can be used either to remove the chicken on the bone or bone, the choice is yours. I typically remove the bones and on a plate with either smooth or dirty rice. Cover the chicken mixture and serve with Rue with your favorite side dish. If your choice of rice cover with Rue. Serve warm.
