5 C. water

1 C. vegetable broth

1 16 ounces pkg. of split peas

1 / 2 C. canned spinach juice (pureed) (secret ingredient)

Salt & pepper to taste

1 C. Half N Half

3 T. butter

1 small yellow onion(diced)

1 clove garlic (minced)

Pinch of ground cumin

In a large, heavy soup pot Place ham hocks, water and vegetable broth. You can salt in the soup. Bring to a rolling boil.

Add split peas, stir and adjust heat setting to medium heat. Cover with lid, let boil slowly for 1 hour. Stir again and again that in any case, scratch their sides and bottom of the soup pot.

While peas cook, melt in a small pan over low heat Butter.

Chicken Consomme Brunoise Recipe

A consomme is made by adding a mixture of ground meats or mouselin with Mirepoix, tomatoes, and egg whites into either bouillon or stock. This is then slowly brought to a simmer, and carefully kept there until the desired product is reached. The act of simmering brings impurities to the surface of the liquid, which are further drawn out due to the presence of acid from the tomatoes. Eventually, all the solids will form a raft at the surface of the liquid, which is held together by the egg protein. The resulting concoction is then a clear liquid that has either a rich amber colour for beef or veal consomme or a very pale yellow color or poultry consomme. It is then carefully drawn from the pot and passed again through a filter to ensure its purity, and then is put through the lengthy process of skimming all visible fats from its surface. When meat is being prepared for consommé, as much fat as possible should be trimmed. Cartilage and tendons should be included because these contain gelatin, which enhances the flavor of the soup. If beef or veal is used, shin meat is ideal because it is very low in fat, very high in gristle, and undesirable for most other purposes. The meat is best if it is ground very fine into mousselin.

Consommes are usually served piping hot because they tend to cool down more quickly than other soups and form a gel when they do. They are most often served with garnishes which vary in complexity from a simple splash of sherry or egg yolk, to cut vegetables, to shaped savory custards called royales. Consommes are ideal for whetting the appetite of the diner, especially in the traditional seven-course meal format, as they are very rich and tasty in flavor, but are neither filling nor heavy feeling after consumption.

Consommes tend to be both expensive and difficult to make. A large amount of meat can yield a small amount of consomme. In some recipes, as much as a pound of meat can go into a single 8oz serving. The difficulty stems from the relatively complex clarification process involved in making it, which can often fail the impatient, careless, or inattentive cook.

Despite, or perhaps because of, these limitations, consomme has maintained its place as one of the most highly regarded and appreciated soups in the world.

The ingredients you will need for Chicken Consomme Brunoise: Clearmeat: 8 Ounces of Ground chicken breast only

4 Ounces of yellow onion juliened

2 Ounces of celery juliened

2 Ounces of carrot juliened

4 Egg whites whisked

4 Ounces of chopped tomato

Consomme:1 12 inch cheesecloth for herb sachet and a piece of butchers twine

6 Cups of cold chicken stock

1 Parsley sprig with stem removed chopped

2 Thymes srpigs with stem removed chopped

1 Whole clove

1 Bay leaf

Salt and Black pepper as needed or To Taste

First you will whisk your egg whites and mix your clear meat with the frothy egg white mixture. You will then add your mirepoix which consists of the onion, celery and carrots, tomato and herb sachet. To make the herb sachet lay the cheesecloth flat on the table and add your parsley, thyme, clove and bay leaf. Then tie it with one end of the twine and the other end to a handle on the side of the stock pot if you have one. If you do not that it fine it will float with the raft.

Second you will add the cold stock to the stock pot and add your clearmeat ,and give it a stir you will stir this consomme just a few times until it reaches the desired temperature of 140F degrees and then stop!. No more stirring after this point! You will then notice that the clearmeat has started to form what is called a raft. You will poke a small vent hole in the raft by using a spoon to create and opening. Do this very gently you do not want to put any particles back into the soup. You will then remove the pot from the full flame. You will leave the pot half on, or half off of the stovetop. You want the temp of the soup to be about 140 F and over a medium low to a low heat. The soup will start to filter itself through the clearmeat raft. You will want to taste for salt and pepper and add to the top of the raft and it will filter through and not cloud your consomme.

When you are ready to serve you will take some sarrots and celery and juliene them, once juliened you will cut into brunoise and add to a serving bowl. You will then carefully strain the contents of the consomme through a cheesecloth, and then heat for an additional 5 to 10 minutes ,or so to make sure it is very hot, if desired and to get out any additional impurities. Then strain through cheesecloth once again. Your consomme should be a very clear, light, and amber in color. Add to the serving bowls, and serve. This is a delicious recipe, and I have made it many times. It is worth the effort.

Common Cold Recipes – Chicken Soup and Congee

As we know the common and seasonal cold are the most commonly occurring illnesses in the entire world, with more than 1 billion colds per year reported in the United States alone. The common cold is a self-limited illness caused by any 1 of more than 200 viruses.

Traditionally, any member of Chinese families who has a cold were only allowed to take hot chicken soup and chicken congee, avoiding all the hard to digest and cold foods. No one knows why but it works more effectively.

Here are some chicken and chicken congee soup recipes that I have used every time when a member of my family getting a cold.

1. Vietnamese Recipe : Chicken Congee Hue Style

Stock:

* 5 chicken thighs, bone in & with skin

* 1 two-inch knob fresh ginger, peeled & halved lengthwise

* 5 whole cloves garlic, peeled

* 1 onion, peeled & quartered

* 10 peppercorns

Congee:

* 2 tbsp olive oil

* 3/4 cup jasmine rice, rinsed & drained

* 2 cloves garlic, finely chopped

* 3 shallots, diced

* 1 tbsp fresh, minced ginger

* 4 stalks scallion, thinly sliced (white for soup, green for garnish)

* 2 tbsp Vietnamese fish sauce

* fine sea salt and freshly cracked black pepper to taste

* handful fresh Vietnamese coriander leaves, chopped

* handful fresh Thai basil leaves, chopped

* handful fresh spearmint leaves, chopped

* lime wedges (optional)

To make stock, put first set of ingredients into a 6-qt stock pot and fill up with cold water. Bring to a boil and immediately lower heat to let stock gently simmer. Allow chicken to poach for about 25 minutes or until cooked through. Remove chicken and allow to cool. Carefully take meat off the bones and try to keep the meat in large pieces. Return skins and bones to stock pot to continue simmering. The chicken meat can then be shredded into long, thin strips for use in congee or salad. Continue to add hot water to stock pot to keep ingredients submerged for the remainder of cooking time. I like to simmer my stock for at least 2 hours, but ideally it should simmer for 6 hours or longer. Once done, pour stock through a fine mesh strainer into another stock pot. Discard the solids.

Rinse and drain rice. Heat up a skillet with olive oil, shallot, ginger, garlic and rice and toss until rice is fragrant and fully coated with oil. Transfer rice to pot of simmering stock. Cook for another 30 minutes or until rice is tender. Add white part of scallions, fish sauce and salt & pepper. Serve in soup bowl, topped with shredded chicken and chopped herbs. You can squeeze a bit of fresh lime juice for a burst of freshness. Mix all ingredients up before eating in order to savor all the wonderful flavors.

2. Chicken Congee with Steamed Vegetables

o 1 to 2 cups long grain rice

o 5 to 6 cups chicken broth

o 2 tsp salt

o olive oil

o salt and pepper

o 2 cups dark chicken, loosely chopped

o your favourite vegetables

o peanuts, chopped chillies or chopped scallions for garnish

Traditionally, congee is made when water is added to rice and then boiled to a porridge-like consistency. Substituting chicken broth for water, the congee has an extra strong flavour. Start by bringing the broth and the rice to a boil. Once boiling, reduce to medium low. Then put the lid on the pot, letting steam escape as when making rice. Cook the chicken in a frying pan for a minute or two to give it some colour and then add to the rice. Stir occasionally for 1 hour to 1 hour 15 minutes, or until the congee achieves the right consistency and serve. Add salt, garnishes to taste and white pepper for flavour without the heat. If you have a steamer, adding your favourite vegetables into the pot will help the chicken broth infuse with the vegetables, as well as save you cooking time!

3. Mom’s Cold-Season Chicken Soup Recipe

Ingredients

4 cups of home made chicken soup

Fat from the homemade chicken stock

1 yellow onion, peeled and roughly diced

2 carrots, sliced in half-inch slices (about the same amount as onion)

2 celery stalks, sliced in 1/4 inch slices (about the same amount as the onion)

1 Tbsp fresh parsley leaves

1 Tbsp of chopped greens from a green onion (green part of the green onion).

1/4 teaspoon poultry seasoning

1/8 teaspoon (a pinch) of crushed red pepper flakes (or a small pinch of cayenne)

Salt and pepper to taste

Method

In a 4 qt saucepan, heat a tablespoon of chicken fat (that has risen to the surface and solidified from your homemade stock) on medium high heat. If you don’t have enough chicken fat, you can add some olive oil. Sauté the vegetables in the fat until the carrots are almost done. While you are sautéing the vegetables, add the seasoning – the poultry seasoning, the crushed red pepper flakes, a pinch of salt and a pinch of pepper. Seasoning like this during the cooking of the vegetables brings out their flavor. According to my mother, crushed red pepper flakes or cayenne is very helpful for a cold, which is why it is part of this recipe. Add the 4 cups of stock. Bring to a low simmer. Add the fresh parsley and green onion greens. Check seasoning and adjust to taste.

Serve with (at least) day old crusty French bread.

Serves 3.

Easy Mexican Recipes – Tater Taco Casserole

Tired of boring old tater tots? Here’s a unique way to use those bland tater tots.

2 pounds ground beef

1/4 cup onion, chopped

1 (1.25 oz.) pkg. taco seasoning

2/3 cup water

1 (11 oz.) can whole kernel corn, drained

1 (10.75 oz.) can condensed nacho cheese soup, undiluted

1 (32 oz.) pkg. tater tots

Directions

Preheat oven to 350 degrees. Prepare a 13x9x2-inch baking dish with nonstick cooking spray.

In a skillet, cook the beef and onion over medium heat until the meat is brown; drain. Stir in the taco seasoning and water. Simmer uncovered for 5 minutes. Add in the corn and soup; mix well.

Spread beef mixture inside of prepared baking dish. Arrange the tater tots in a single layer over the top of beef mixture. Bake, uncovered for 30 to 35 minutes or until potatoes are crisp and golden brown.

Green Chili and Cheese Casserole

Whip up this tasty Mexican recipe using just four simple ingredients.

4 boneless, skinless chicken breasts

1-1/2 cups shredded pepper jack cheese

1 (4oz.) can diced green chili peppers, drained

1 tablespoon dry fajita seasoning

Directions

Preheat oven to 350 degrees. Prepare a 9-inch square baking dish with nonstick cooking spray.

Make a deep cut into the side of each chicken breast half to form a pocket.

4 slices bread

4 slices Cheddar or Monterey Jack cheese
