For even, conductive heating, an aluminum disk is encapsulated between two layers of stainless steel in the base. Was looking for a pot to replace an old pasta cooker I had been using for years to blanch peas and beans before freezing. This is PERFECT!!!!!! Water quickly comes to a boil and the strainer makes easy work of blanching and cooling down the peas. Also the insert almost reaches the bottom of the pot …so you can blanch 2-3 times more than in a conventional enameled alum. pan that I had been using. I purchased this pot to add to my collection of Revere (yes, Revere) pots, because I was not happy with the current quality of their pots. I purchased 2 Farberware pots and have been VERY happy, so far. I think the previous reviewers have said it all–nice finish, thick, even-heating bottom, heavier gauge metal than Revere, handy 12 qt size, fairly cool handles when cooking, easily scrubbed clean. I would have liked the spot-welded handles to be a little wider and welded a little better, but so far so good. Also, Amazon should pack stuffing ALL the way around pot in shipping box. They packed it to one side and stuffed two sides. Pot arrived with a small dent on unstuffed side; but it arrived quickly. I am pleased with the quality for the price I paid on sale. I got this with a Christmas gift certificate this past Christmas and I love mine. I have had no problems with it at all. I do not put it in the dishwasher though and do not put any of my other pots/pans in either…I have always washed them by hand like my mom taught me….I came from a big family and the dishwasher was reserved for plates, glasses and utensils. I usually soak any of my pans that might require a brillo pad. I haven’t used a brillo in forever. I have not made tomato sauce (gravy) in mine yet, but have made a big pot of chilli and all was well. I do spray my pans that are not nonstick with cooking spray though before use. Maybe that is why nothing happened when I made the tomato based chilli. My other pots/pans are all-clad, but I WOULD buy this brand again. As a matter of fact, I am thinking of giving my baby sister a set for her birthday this fall as I think it is time she upgrade to a grown woman set..lol.
