Ingredients:
2 tablespoons olive oilOil
2 medium onions, chopped
4 garlic cloves, finely chopped
1 28-oz can tomatoes, chopped with juice
8 cups vegetable broth or chicken broth
1 / 2 teaspoon pepper
1 / 2 teaspoon chili powder
1 / 2 cup of brown rice, too
2 / 3 cup extra-crunchy peanut butter
What to do:
1. Heat the oil in a large soup pot over medium heat.
2. Saute onions and garlic until translucent and tender.
3. StirThe tomato has, pepper and chili powder.
4. Reduce the heat and simmer, uncovered, for 30 minutes.
5. Stir in the rice, cover and simmer for 15-20 minutes, until rice is soft.
6. Stir in peanut butter until mixed well.
7. Serve hot. Makes about 10 servings.
You could try by chopped red and green peppers with the onions. Try putting a dollop of sour cream to each soup. Enjoy!
