Fettuccini Alfredo
9 ounces fresh or dry fettuccine
1 1/2 cups heavy cream, divided
1/4 cup fresh lemon juice
6 tablespoons unsalted butter
1 to 2 teaspoons grated lemon zest
Pinch of freshly grated nutmeg
1 cup freshly grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon ground white pepper
Cook fettuccine according to package directions in large stockpot. Drain.
In large skillet, combine 1 cup cream, lemon juice and butter. Heat over medium heat, stirring occasionally, until butter melts. Stir in zest and nutmeg. Remove from heat. Add pasta, 1/2 cup cream, Parmesan, salt and pepper. Toss over low heat until sauce thickens slightly, about 1 minute. Season with more salt and pepper to taste.
Makes 4 to 6 servings
